This bar features beans from Åkesson’s Bejofo Estate. The beans dry on concrete beds under the hot Madagascan sun. This way the cocoa beans retain acidity therefore dominating the flavour profile with fruity flavours of pineapple and citrus, with an underlying cream and vanilla.
